Sweet Potato Casserole

The holidays are here!!! With Thanksgiving coming up, I’m so excited to make this casserole again! My mother had a sweet potato patch in her garden, and after a couple of months, out came these humongous sweet potatoes and I knew exactly what to do with them. The crunchy nuts on top are my favorite part đŸ™‚ Hope your families enjoy this recipe as much as mine does!
Ingredients
- 3 cups of sweet potatoes, cooked and drained OR 4 large, fresh sweet potatoes
- 1/2 cup sugar`
- 1/2 cup butter
- 2 eggs
- 1 tsp vanilla
- 1/3 cup milk
- 3 tsp melted butter
- 1 cup light brown sugar
- 1/2 cup all-purpose flour
- 1 cup chopped pecans
Method
Step 1
Casserole: If using fresh, boil and mash potatoes.
Step 2
Put the potatoes in a bowl and mix all the other ingredients.
Step 3
Place in a 13x9 baking dish and set aside
Step 4
For the Pecan Topping, Melt the butter and mix in remaining ingredients.
Step 5
Sprinkle on top of potato mixture.
Step 6
Bake casserole at 350 degrees F for 25 minutes
