As a part of my collection of favorite recipes that I’m posting here, this quiche makes the list. It’s perfect for breakfast or brunch, and definitely worth the calories.
- 1 single pie crust, chilled
- 12 slices of bacon
- 1 cup of mixed shredded Swiss and Gruyere cheese
- 1 small onion, minced
- 4 eggs, beaten
- 1 1/2 cups heavy whipping cream
- 3/4 tsp salt
- pinch of black pepper
- 1/4 tsp white sugar
Press the pie dough into the bottom and sides of a baking dish. I used an 8x8x2inch dish, but you could use a pie pan instead.
Fry the bacon and set aside. Sauté the onions in the bacon grease until translucent.
Sprinkle the bacon, cheese, and onions in the dish. In a glass bowl, whisk eggs, cream, salt, pepper, and sugar. Pour mixture into the baking dish, and top with extra cheese.
Bake at 400*F for 15 minutes. Reduce the heat to 300*F and bake for half an hour, or until a knife inserted comes out clean. Allow quiche to sit 10 minutes before cutting into wedges or slices. Adapted from allrecipes.com
