A healthy and refreshing treat to cool off in those hot summer days.
- 4 ripe mangoes, peeled, seeded, and cubed
- 1 cup simple syrup
- 3 tbsp fresh lime juice and some zest
First, put the ice cream mixer bowl in the freezer the night before if it needs to be frozen to make the ice cream.
Then make the simple syrup; Boil 1 cup of water and stir in 1 cup of sugar until dissolved. I added the lime zest in the simple syrup.
In a blender, puree the mango, lime juice, and strain the infused simple syrup until smooth.
Place in an ice cream maker and freeze.
