Coconut Chicken Curry with Vegetables

Ingredients

  • 2 tbsp vegetable oil
  • 3 tbsp red thai curry paste
  • 1 yellow onion, sliced
  • 2 raw chicken breasts, cubed
  • salt and pepper
  • 1 1/2 cups broccoli florets
  • 1 1/2 cups chopped carrots
  • 1 tsp dried basil
  • 3 garlic cloves, minced
  • zest of 1/2 lime
  • 1 1/4 cups coconut milk
  • 1/4 cup chicken stock
  • 1 (14 oz) can diced tomatoes
  • lime wedges (optional)

Method

Step 1

Cook 1 teaspoon of oil, curry paste, and onions in a large sauté pan over medium heat, stirring often and letting it sizzle, 5 to 6 minutes.

Step 2

Pat the chicken dry, sprinkle with salt and pepper and the remaining oil to the pan

Step 3

Cook the chicken in the onion-curry mixture until it's golden on all sides

Step 4

Add broccoli, carrots, basil, garlic, lime zest, and cook until the veggies are coated, about 2 minutes.

Step 5

Add coconut milk, chicken stock, and tomatoes, and bring to a simmer. Let the chicken cook and sauce thicken, about 20 minutes. Squeeze with lime juice (optional)
